4 ripe Apple (such as Boskop)
butter (for the pan)
2 tablespoons melted butter
7 ounces Ricotta cheese
3 tablespoons powdered sugar
2 tablespoons Chocolate
2 tablespoons coarsely chopped Pistachio
1 tablespoon dried Cranberry
3 ounces Whipped cream
powdered sugar (for dusting)

Preparation steps

Preheat the oven to 350°F. Rinse the apples, remove the cores with an apple corer, carefully pierce the skin in several places with a sharp knife (so they do not burst during cooking). Place the apples in a buttered baking pan. Top each with a bit of butter and bake for 35-40 minutes in the preheated oven until golden brown. (If desired, you can peel a spiral of skin off of the apples with a vegetable peeler before baking).

Meanwhile, mix the ricotta, sugar, chocolate chips, cranberries and pistachios. Whip the cream until stiff and fold gradually into the ricotta mixture. Remove the fully baked apples from the oven and cool slightly. Put the ricotta mixture into a piping bag with a standard tip and fill the apples with it. To serve, transfer to plates and dest with powdered sugar.
