Baked Apple and Marzipan Crepes
- For the apples
- 4 Apple
- 50 grams Marzipan
- 2 tablespoons Amaretto
- 2 tablespoons butter
- 250 milliliters Vanilla ice cream
- 40 grams pickled ginger (in syrup)
For the apples, rinse apples and cut our cores using an apple corer. Mix marzipan with amaretto and pour over apples. Place apples in a baking dish, cover with small pieces of butter and bake in preheated oven at 200°C (approximately 400°F) for 10–12 minutes.
For the crepes, mix flour with milk, eggs, sugar and vanilla. Let sit for 10 minutes. Add sliced almonds. Heat clarified butter and cook dough into 4 thin crepes. Place one apple on each crepe.
Thaw vanilla ice cream. Finely dice ginger and stir into ice cream. Top apples with vanilla ginger sauce and serve garnished with mint.
