- 2 Zucchini
- 750 milliliters vegetable stock
- 3 ripe Avocados
- 1 lemon (juiced)
- 250 grams Yogurt
- ground Cumin
- salt
- 4 Tbsps Whipped cream
- 2 Tbsps scallions
Preparation

Rinse and dry zucchnis, cut into small cubes. Bring stock to a boil and simmer zucchini for 3-4 minutes on low heat. Remove from heat and cool until lukewarm. Peel avocados, halve and pit. Cut into cubes. Drizzle with lemon juice and add to zucchini. Add yogurt. Puree soup and season with cumin powder and salt.

Pour soup into bowls and garnish with whipped cream and chives. Serve.
