Cut avocado in half, remove pit, loosen flesh from the shell and cut into thin columns. Drizzle with lemon juice and spread on toasted bread slices. From the scallion, cut the green part into rings and sprinkle along with a little arugula and cashews onto the avocado and serve immediately.
