For the fried potatoes

For the escalope

veal escalope (Topside, 160 g each)

Preparation steps

1.
Heat the clarified butter in a pan and cover the bottom with the potato slices. Fry on a medium heat for 3-4 minutes until golden brown turning occasionally.

Once the potatoes are light brown, add the bacon and fry together. Turn occasionally but not too often so that the potatoes brown evenly.

Once the bacon begins to brown, add the onion and fry for around 5 minutes until done. Season with salt and ground black pepper.

Tenderise the escalopes and season with salt and ground black pepper.

Beat the eggs and the cream together. Dust the meat with flour, drag through the beaten egg and cover with breadcrumbs.
6.
Fry in clarified butter in a large pan for 3-4 minutes on each side. Drizzle with the clarified butter every so often. Once finished, pat dry with kitchen paper and serve with the fried potatoes. Goes well with a cucumber salad.
