Preparation steps

For the macarons: Preheat the oven to 150°C (approximately 300°F). Beat the egg whites with the lemon juice until peaks form, gradually sprinkle in the sugar and continue beating until stiff and glossy. Carefully fold in the almonds, divide the dough and color each portion with food coloring of your choice.

Spoon the mixture into a piping bag with large round tip and pipe small discs about 2 cm (approximately 3/4 inch) wide onto a baking sheet lined with parchment paper. Bake the macarons about 35 minutes, leaving the oven door slightly open.

For the filling: Chop the chocolate into small pieces in a heat-proof bowl placed over a pot of hot water and melt. Whisk in the cream and butter in small pieces. Divide the cream into portions and color as desired. Allow the cream to cool slightly.

4.

Spread half of the macarons with various fillings and top with the matching counterpart.
