Asparagus with Sage Butter
For the asparagus, peel asparagus thoroughly and remove ends. Bring plenty of salted water to a boil in a large pot, add butter, sugar and asparagus and cook for about 18 minutes.
Lift asparagus out of the pot with a slotted spoon and drain.
For the sage butter, melt butter in a saucepan and skim off foam. Rinse sage, pat dry, add to the saucepan and fry. Cut ham into thin strips, fold into the sage butter and season with pepper. Arrange asparagus on a platter, cover with sage butter sauce and serve.
