Rinse and spin dry arugula and sprouts, arrange on plates.
2.
Rinse tomato, cut in half, remove seeds and chop finely.
3.
Combine tomato juice with oil and vinegar, season with salt, pepper and sugar.
4.
Peel avocado, pit and cut into cubes. Toss with tomato dressing.
5.
Arrange diced tomatoes on top of salad, drizzle with avocado dressing. Serve.
