Aromatic Fruit with Noodles

Mix together the apple juice, lime juice, sugar, lemongrass, star anise and the cinnamon stick and heat in a small pot. Add the peaches, remove from the heat and leave to cool.
Cook the noodles in boiling salt water until al dente. Drain and quench.
Fry the chicken in hot oil on all sides. Season with salt and ground black pepper and stir in the spring onions. Set aside.
Mix together the noodles with 2/3 of the peaches, some juice, the meat and the spring onions and arrange in a bowl. Serve the remaining peaches separately.
