Apricot Slices with Vanilla Cream
Preheat the oven to 200°C (approximately 400ºF) and line a baking sheet with parchment paper.
Roll out one sheet of pastry and cut into 8 equal squares. Drain the apricots and cut into wedges.
Mix the pudding in a bowl with the sugar and vanilla sugar. Add 4-5 tablespoons of cold milk and stir until smooth. Boil the remaining milk and then mix into the pudding mixture with a whisk. Simmer for 1-2 minutes until creamy. Remove from heat and stir in the egg yolks.
Distribute 2-3 tablespoons of pudding mixture onto the center of the pastry squares. Place the apricots on top.
Roll out the remaining pastry and cut into strips. Arrange the strips around the edges of the apricot squares and brush with some cream.
Place on the baking sheet and bake for about 15 minutes until golden brown. Allow to cool slightly and serve dusted with powdered sugar.
