1 plate Puff pastry dough (about 20x30 cm or 8x14 inches)
1 packet Instant pudding (vanilla)
400 milliliters milk
3 tablespoons sugar
100 milliliters Whipped cream
6 ripe Apricot
Pastry flour (for kneading)
1 egg yolk
250 milliliters Apple juice
1 packet clear Pie glaze

Preparation steps

Preheat the oven to 200°C (approximately 390°F).

Spread out puff pastry spread to thaw.

Stir together pudding mix and 3 tablespoons milk until smooth. Boil remaining milk, sugar and cream. Gradually stir in pudding mixture. Bring mixture to a boil, then remove from heat and let cool.

Rinse apricots, cut in half, remove seeds and cut into wedges. Roll out pastry onto a floured surface, cut into 10 cm (approximately 4 inch) squares. Turn in the edges to make a crust and add 2 tablespoons of custard to each. Top with apricot wedges and brush edges with egg yolk.

Place squares on a baking tray lined with parchment paper. Bake until golden brown, about 10-15 minutes. Remove and let cool briefly.

Meanwhile, combine apple juice and glaze over medium heat. Briefly boil and drizzle over pastries. Let cool completely and serve chilled.
