Preparation steps

Wash, halve and stone the apricots, then pack into a sealable jar with the vanilla pod. Pour the apricot schnapps and alcohol over the apricots and leave to stand in a sunny place for a week.

Put the sugar and water into a pan and bring to the boil, stirring. Then leave the syrup to cool. Chop the apricots, add the sugar syrup and leave to stand in a warm place for 3 more weeks, shaking vigorously from time to time.
3.
Finally strain through a sieve lined with a coffee filter, then bottle and cork. Store in a cool place for at least 2 weeks before using.
