40 grams melted butter
2 sheets large Filo dough
3 tablespoons Apricot jam
1 egg yolk
6 tablespoons Apricot ice cream (from the store)
200 grams Whipped cream
1 packet Vanilla sugar

Preparation steps

For the cones: Cut the filo sheets into 8 equal pieces about 10 x 20 cm (approximately 4 x 8 inch) in size. Brush with the melted butter. Stack the sheets together in sets of 2. Brush with the jam and roll into cones. Beat the egg yolk in a bowl and brush over the filo pastry cones.

Place on a parchment-lined baking sheet. Bake in a 160°C (approximately 325°F) oven until golden brown, about 12 minutes. Remove and allow to cool.

For the cream: In a bowl, whip the cream and vanilla sugar until stiff peaks form.

For serving: Place the apricot ice cream in a piping bag fitted with a star tip and pipe into each cone. Serve with the cream.
