Halve the apricots and remove the stones. Coarsely chop half of the apricots. Add to a pot with the white wine and bring to a boil. Add to a blender and puree completely.
Finely dice the remaining apricots and the onion. Add the diced apricots, onions, raisins, sugar, curry powder, vinegar, and lemon zest to the puree. Add to a pot and bring to a boil. Cook for 5-10 minutes, then season to taste with salt and Tabasco.
