700 grams Apricot (canned)
125 grams softened butter
125 grams sugar
2 Tbsps Vanilla sugar
3 eggs
500 grams Quark
30 grams Semolina
50 grams ground almonds (peeled)
1 tsp lemon zest (organic)
20 grams slivered almonds
powdered sugar (for dusting)

Preparation steps

1.

Butter ramekins (8 cm in diameter) (approximately 3 inches) and sprinkle with breadcrumbs. Drain apricots well. 

2.

Whisk butter with sugar and vanilla sugar until creamy. Add eggs, one at a time, quark, semolina, almonds and lemon zest. Spread cream in ramekins and top with apricots. Bake in preheated oven at 180°C (approximatley 350°F) for about 25 minutes. Toast flaked almonds in a dry pan until golden brown. Sprinkle tartlets with almonds and dust with powdered sugar. Serve.
