250 grams Pastry flour
50 grams sugar
1 packet Vanilla sugar
1 tsp Lemon peel

160 grams butter
For the filling
200 grams Marzipan
75 grams butter
5 grams Ground cinnamon
100 grams ground almonds

Preparation steps

For the dough, mix the flour with the sugar, vanilla sugar, lemon zest and 1 pinch of salt. Pour out onto a work surface, make a well in the center, beat the egg into the well and distribute the butter in small pieces around the flour. With a large pastry knife, mix all the ingredients until crumbly, and work everything quickly into a smooth dough. Shape into a ball, wrap in plastic and refrigerate for 30 minutes.

Preheat the oven to 180°C (approximately 350°F). Meanwhile, knead the marzipan with the sugar, butter, cinnamon, and ground almonds. Roll out the dough 5 mm (approximately 1/4 inch) thick on a floured surface. Cut out 10 cm (approximately 4 inch) circles and coat with the filling. Fold the circles to form triangles and place on a baking sheet lined with parchment paper . Bake for about 15 minutes until golden brown.

Heat the jam slightly. Toast the sliced almonds in a dry pan until golden. Remove and let cool. Remove the finished cookies from the oven, allow to cool briefly, spread the center with jam and decorate the top with the toasted almonds.
