Apples Preserved in Goose Fat
Cut goose fat into small cubes. Peel apple and onion. Quarter, core and slice apple. Finely chop onion. In a saucepan, cook onion, apple and thyme in goose fat over low heat, stirring occasionally. Cook until goose fat cracklings are golden-brown, about 20 minutes,
Season with salt and pepper. Divide mixture among prepared jars and store in a cool place. Do not move jars until the fat rises to the top and solidifies.
