Apple Walnut Cake

- 7 ½ ozs sugar
- 5 eggs
- 1 tsp Vanilla
- 18 ozs Pastry flour
- 5 tsps Baking powder
- 2 tsps cinnamon
- 5 Tbsps cocoa powder
- 9 ozs butter (room temperature)
- 3 ½ ozs
- 3 ½ ozs Walnut
- 3 tart Apple (such as Granny Smith)
Whisk sugar with eggs and vanilla sugar until fluffy.
Mix flour, baking powder, cinnamon and cocoa powder. Add butter, milk and flour mixture to egg mixture and process to a smooth batter.
Coarsely chop walnuts. Peel apples, quarter and core, grate. Add apples and walnuts to the batter. Spread batter in a lined with parchment paper baking pan and bake in a preheated oven at 350°F for about 55-60 minutes (inserted toothpick should come out clean). Remove from oven and cool. Serve.

Walnuts are rich in healthy polyunsaturated fatty acids, while the flour, especially if you use whole-wheat flour, stimulates digestion due to its high fiber content. Additionally, the apples contain plenty of secondary plant substances that act as antioxidants, which protect our cells from free radicals.

There are many ways to add variation to this recipe. If you like, you can try other types of flour or vary the types of nuts and fruit included in the recipe. Finally, hazelnuts or almonds combined with pears could also be a great combination!
