300 grams Pastry flour
1 teaspoon Baking powder
75 grams powdered sugar
1 pinch salt
1 tablespoon Vanilla sugar
150 grams Quark
125 milliliters milk
75 milliliters vegetable oil
Pastry flour (for the work surface)
1 egg white
1 egg yolk
1 tablespoon Whipped cream
For the filling
3 tablespoons raisins
1 teaspoon Rum
3 Apple
½ lemon (Zest and juice)
3 tablespoons sugar
2 teaspoons Vanilla sugar
1 Cinnamon stick
For finishing
Granulated sugar (to sprinkle)

Preparation steps

For the filling, soak the raisins in rum overnight.

For the dough, sift together the pastry flour, baking soda, powdered sugar, salt and vanilla sugar. Stir in the quark, milk and oil until smooth. Cover with plastic wrap and refrigerate for 30 minutes.

For the filling, peel the apples, quarter, core and dice into small cubes. Combine the apples, raisins, lemon juice and zest, sugar, vanilla sugar and cinnamon in a saucepan and bring to a boil, covered. Remove the cover and remove from heat. Stir occasionally and let cool. Remove cinnamon stick.

Preheat the oven to 180°C (approximately 350°F).

Knead the dough on a floured surface and roll out thinly to about 40 x 50 cm (approximately 16 x 20 inches). Cut into squares 10 x 12 cm (approximately 4 x 5 inches). Spoon 1 tablespoon of filling on each square. Brush the edges with beaten egg white and close firmly to form a triangle.

Place pastries on one or two parchment-lined with baking sheets. Beat the egg yolk with the cream and brush the dough. Bake for 20-25 minutes until golden brown.

Remove from oven and let cool on a wire rack.

To garnish, sprinkle with sugar before serving.
