For the apple tarts
100 grams butter
60 grams sugar
½ packet Vanilla sugar
1 pinch salt
2 eggs
70 grams Pastry flour
1 teaspoon cornstarch
½ teaspoon cinnamon
½ teaspoon Baking powder
1 Apple
6 small, high-edged Tartlet pans
butter (for the molds)
breadcrumbs (for the molds)
To serve
300 milliliters Vanilla ice cream
For the apple chips
1 Apple
125 grams sugar

Preparation steps

For the apple tarts, mix the  butter, sugar, vanilla sugar and salt until fluffy. Gradually stir in the eggs. Sift the flour, starch, cinnamon and baking powder and stir in. Peel the apples, quarter, core and cut into large cubes. Immediately fold into the batter.

Grease the ramekins and sprinkle lightly with breadcrumbs. Fill with batter. Place ramekins in a preheated oven at 180°C (approximately 350°F) for about 25 minutes. Remove the ramekins from the oven. Let cool for 5 minutes, then dust with icing sugar.

For the apple chips, boil the sugar with 200 ml (approximately 1 cup) of water to form a syrup. Rinse the apple, remove the core and slice into thin slices. Place the apple slices in the hot syrup and infuse for 2 minutes. Remove the slices, drain briefly and place on a lined baking sheet in the oven at 120°C (approximately 250°F) for about 1 to 1 1/2 hours, until dry.

To serve, place a scoop of vanilla ice cream on each apple tart and decorate with apple chips.
