The tarte tatin shows what can be made out of apples. Apples are also good for your health, because the local fruit contains the soluble fibre pectin, which balances the digestion. In addition, the vitamin C contained in apples ensures a strong immune system.

Even more fibre can be extracted if the peel remains on the apples, because most of it is hidden in and directly under the peel.

20 grams butter
powdered sugar (for sprinkling)

Preparation steps

1.

Roll out puff pastry on a work surface until about 20-25 cm in diameter (approximately 8-10 inches). Peel and core apples, then cut into wedges.

Heat butter in an ovenproof pan (20-25 cm in diameter) and caramelize sugar until golden brown. Remove pan from heat and arrange apples in a fan pattern in a pan. Top with puff pastry, pressing the edges firmly. Prick pastry with a fork several times.

Bake in preheated oven at 200°C (gas mark 3, fan: 180°C) (approximately 400°F) for about 12-14 minutes or until golden brown. Remove from the oven and heat on the stove on medium heat for about 2 minutes, shaking the pan to loosen apples. 

4.

Invert tart onto a caka plate and dust with powdered sugar. Serve warm with ice-cold, lightly whipped crème fraîche, if desired.
