1 egg yolk
2 tablespoons brown sugar
2 tablespoons sugar
1 teaspoon Ground cinnamon
1 egg yolk (for brushing)

Preparation steps

For the tart dough: Combine the flour, sugar, salt, butter, and egg and knead until smooth. Shape into a ball, cover with plastic wrap, and chill for about 30 minutes in the refrigerator. Grease an 8-inch tart pan. On a floured work surface, roll out the dough thinly, cut out a disc slightly larger than the prepared pan and use to line the pan. Cut out 1 1/2-inch discs from the remaining dough.

Preheat the oven to 425°F. Peel the apples, quarter, core, and slice. Sprinkle with lemon juice. Whisk the mascarpone, sugar, and egg yolk until smooth then spread over the tart base. Cover with apple slices and sprinkle with the brown sugar, sugar, and cinnamon. Brush the small circle with beaten egg yolk then use to decorate the tart edges. Bake for about 30 minutes, until golden brown.
