Apple Tart in Puff Pastry
Thaw puff pastry.
Butter springform pan.
Rinse and dry apples, cut into quarters, peel and core, combine with wine and sugar.
Roll out 300 grams of puff pastry on lightly floured surface. Cut out a circle about 35 cm (approximately 14 inches) in diameter and line pan with it, making an edge all around.
Whisk egg yolks with crème fraîche and cornstarch, combine with apples. Place into a pan and smooth.
Roll out remaining pastry and cut into thin strips. Arrange pastry strips decoratively on top of tart. Whisk egg yolk with 1 tablespoon of water and brush tart with the mixture. Bake in preheated oven at 180°C (approximately 350°F) for about 50-60 minutes or until golden brown.
Remove from oven and cool. Loosen from pan and serve warm or cold.
