Ingredients

For the pastry
250 grams Pastry flour
1 pinch salt
1 egg yolk
1 tablespoon Corn oil
125 milliliters lukewarm water
For the filling
1 ½ kilograms Russet apple
3 tablespoons lemon juice
75 grams raisins (as desired)
50 grams chopped almonds (as desired)
125 grams melted butter
2 packets Vanilla sugar
2 tablespoons breadcrumbs
½ teaspoon ground cinnamon
powdered sugar (for dusting)

Preparation steps

1.

For the pastry, make a well in the flour and fill the well with salt, egg yolks and oil. Combine the ingredients starting from the center.

Knead into a smooth and slightly shiny dough.

3.

Shape into a ball, brush with oil and cover with a preheated bowl. Let rest for about 30 minutes.

For the filling, peel, quarter and core the apples. 

5.

Cut the apples into thin slices and immediately mix with lemon juice, raisins and almonds.

Roll out the pastry on a lightly floured large kitchen towel very thinly.

Brush the dough with melted butter and fold in half. 

8.

Combine the apple mixture with vanilla sugar, breadcrumbs and cinnamon and place on the dough in a loaf shape.

9.

Fold in the short edges over the filling. 

10.

Roll the strudel up lengthwise using the cloth.

11.

Using the cloth, transfer the strudel to a parchment lined baking sheet, seam side down. 

12.

Brush the surface with melted butter.

13.

Bake in an oven preheated to 200°C (approximately 400°F) for 40-50 minutes. Brush with melted butter through the baking process. 

14.

Remove the apple strudel and let cool slightly.

15.

Dust with powdered sugar and serve sliced.
