Preparation steps

Preheat oven to 220°C (approximately 425°F).

Brush filo dough sheets with butter, sprinkle with sugar and stack together. Cut filo sheets into 8 squares about 8 cm (approximately 3 inches) each.

Rinse, peel and core apples. Cut apples into 0.5 cm (approximately 1/8 inch) thick slices and immediately sprinkle with lemon juice. Place filo pastry squares on a baking sheet lined with parchment paper and bake until golden brown, about 5 minutes. Remove from oven and let cool. Soak raisins in rum. Melt butter in a frying pan, stir in chopped nuts and breadcrumbs and sauté briefly until browned.

Halve vanilla bean lengthwise and scrape out seeds with a sharp knife. Caramelize brown sugar in a saucepan, add apple slices, vanilla bean, vanilla seeds and wine and simmer over medium heat 3-5 minutes. To assemble sundaes, divide nut mixture among 4 plates and scoop ice cream on top. Set a filo square on each scoop and top with apple slices remaining filo squares. Garnish sundaes with rum raisins and pieces of vanilla bean.
