For the dough
200 grams Pastry flour
1 pinch salt
2 tablespoons vegetable oil
1 egg
For the filling
1 lemon
1 ½ kilograms tart Apple
100 grams butter
75 grams sugar
80 grams Rum raisin
1 packet Vanilla sugar
1 heaping teaspoon Ground cinnamon
80 grams chopped Hazelnuts

Preparation steps

For the dough: Combine flour, egg, salt, oil and about 100 ml (approximately .4 cup) of lukewarm water to form a smooth dough. If dough does not hold together, add a little water. Shape dough into a ball, brush with oil, covered and let rest for 3o minutes.

Preheat the oven to 200°C (approximately 390°F).

For the filling: Zest and juice lemon, combine zest and juice. Rinse, peel, quarter, core and julienne apples. Add to lemon juice.

Roll out dough on a floured surface, place on a lightly floured kitchen towel. Spread with half of the melted butter. Spread apples evenly over dough, leaving a 2 cm (approximately 3/4 inch) wide margin. Combine sugar, raisins, vanilla sugar, cinnamon and nuts and sprinkle onto dough. Fold in edges and use kitchen towel to roll up dough. Place on a baking sheet lined with parchment paper and brush with remaining melted butter. Bake until golden brown, about 45 minutes. Remove, let cool and slice. Serve dusted with powdered sugar.
