For the crust
300 grams Pastry flour
75 grams ground almonds
150 grams sugar
1 packet Vanilla sugar
1 egg
1 egg yolk
150 grams butter
1 pinch salt
For the covering
1 kilogram tart Apple
lemons (juiced)
4 eggs
500 grams Cottage cheese
200 grams sugar
1 packet Vanilla sugar
80 grams Almond slivers
4 tablespoons raisins
100 grams Apricot jam

Preparation steps

For the crust, mix all ingredients in a bowl rapidly to form a dough. Form dough into a ball, wrap in plastic wrap and let rest for 30 minutes in the refrigerator. For the covering, peel apples, cut in half, remove core, cut into wedges and sprinkle immediately with lemon juice. Separate eggs. Mix egg yolks in a bowl with cottage cheese, sugar and vanilla sugar. Beat egg white until stiff and then fold into egg yolk mixture.

Roll out dough on a greased baking sheet and press with fingers to form an outside edge. Spread egg yolk mixture over dough and then arrange apple slices on top. Sprinkle with almonds and raisins and bake in a preheated oven at 175°C (approximately 350°F) for 40 minutes. Press apricot jam through a sieve into a saucepan and heat. Remove cake from the oven and sprinkle with apricot jam while still warm. Let cool slightly and then serve.
