Preparation steps

For the savarins, mix the flour with the baking powder in a bowl. Add the sugar, vanilla, milk, small pieces of butter and eggs. Mix everything loosely with a fork, then beat with the whisk attachment of a hand mixer to form a smooth batter. Rinse the apples, cut into quarters, peel, remove the core, grate into the batter and stir. Pour the mixture into buttered ramekins about 10 cm (approximately 4 inches) in diameter. Bake on the middle shelf of a preheated oven at 180°C (approximately 350°F) (gas mark 2-3, convection 160°C or 325°F) for 25-30 minutes. Remove and let cool on a wire rack.

For the quark ice cream, simmer the sugar and water in a saucepan for 5 minutes. Pour into a bowl and cool over an ice water bath. Stir the quark into the sugar syrup along with the lime juice. Process in an ice cream machine according to the manufacturer's instructions.

For the passion fruit sauce, combine the pulp with the sugar. Turn out the apple savarins from the molds. Spread some of the passion fruit sauce on plates. Place the apple Savarins on top of the sauce. Arrange a serving of the quark ice cream on each plate. Garnish with strips of lime zest and mint leaves. Dust with powdered sugar and serve.
