150 grams Pastry flour
½ teaspoon Baking powder
70 grams powdered sugar
70 grams salt
1 egg
1 tablespoon Rum
3 tablespoons Whipped cream
For the filling
8 small tart Apple
2 tablespoons lemon juice
1 egg
½ Vanilla bean
50 grams sugar
250 grams Quark
2 tablespoons cornstarch
3 tablespoons Red currant jelly

Preparation steps

Knead all the ingredients into a dough and let chill for 30 minutes.

Peel the apples, cut out the core and sprinkle with the lemon juice. Separate the eggs. Split the vanilla bean and scrape out the insides of vanilla bean. Beat the egg yolks with the sugar and vanilla until fluffy. Add the quark and the cornstarch. Whip the egg whites until stiff and fold into the quark mixture.

Thinly roll out the dough on a lightly floured surface. Line the tarts. Spread the quark filling into the tart. Place the apples in the filling. Fill the apples with the redcurrant jelly.

Bake the cake in a preheated oven at 180°C (approximately 350°F) for 50-60 minutes.
