Preparation steps

1.

For the dough, cut the cold butter into small pieces Put flour work surface and form a well in the center. Place sugar, salt, egg and butter pieces into the well. Chop everything with a knife until the mixture is crumbly. Quickly knead with hands until smooth.

2.

If the dough is too hard, knead in a little cold water. Wrap dough into aluminum foil and refrigerate for about 1 hour. Peel and core the apples, and brush with lemon juice. Preheat the oven to 180°C (approximately 350°F) convection. Knead the dough again and roll out about 3 mm (approximately 1/8-inch) thick on a floured surface.

3.

Cut four squares of about 20x20 cm(approximately 8x8 inches) from the dough and put the apples in the center. Fold dough corners over the apples, turn in edges so the apples are well wrapped up and press the seams together. Place on a parchment-lined baking sheet and bake until golden brown, 25-30 minutes.

4.

Just before serving, combine butter, breadcrumbs, cinnamon, rum and sugar in a saucepan and let it melt. Place the apples puffs on a plate, spoon breadcrumb mixture on top and serve.
