For the dough
200 grams Pastry flour
1 teaspoon Baking powder
2 tablespoons liquid honey
50 grams sugar
1 egg yolk
1 egg
125 grams cold butter
butter (for greasing)
Pastry flour (for dusting)
For the filling
4 Apple
200 grams baking potatoes
1 tablespoon lemon juice
3 tablespoons Whipped cream
3 tablespoons honey
1 pinch cinnamon
1 packet Vanilla sugar
powdered sugar (for dusting)

Preparation steps


For the dough: Combine flour and baking powder on the work surface. Create a well and add honey, sugar, egg yolk and egg. Cut in butter with a pastry cutter and knead rapidly to form a smooth dough. Wrap in plastic and chill for about 30 minutes. Cut dough in half and roll each half into circles, slightly larger than the pie dish. Grease the pie dish with butter and dust with flour. Press one of the pieces of dough into the dish, cutting the excess with a paring knife.


For the topping: Peel, core, quarter and slice apples. Mix with lemon juice. Peel and grate potatoes. Combine potatoes, honey, cinnamon, cream and vanilla sugar to apples and mix well. Put into pie dish and spread evenly. Top with second piece of dough and remove excess with a paring knife. Press edges to seal and prick with a fork. Brush with egg yolk. Roll out excess dough nd use cookie cutters to create decorations, as desired. Attach decorations to using egg yolk. Bake in an oven preheated to 180°C (approximately 350°F) for about 35-40 min. Remove from oven, sprinkle with powdered sugar and let cool in the dish. 


Serve lukewarm or cold.
