Apple Pie with Streusel Topping
- For the dough
- 300 grams Pastry flour
- ½ cube Yeast
- 60 grams sugar
- 120 milliliters lukewarm milk
- 1 egg
- 60 grams butter
- 60 grams Rum raisin
Pour the flour into a bowl and make a well in the center. Stir the yeast in a cup with 1 teaspoon sugar and 3 tablespoons milk until smooth. Pour into the well, cover and allow to sit for about 15 minutes in a warm place. Add the remaining dough ingredients and knead with the dough hook of a hand mixer to make a smooth dough. Cover and let rise in a warm place until it has doubled in volume.
Meanwhile for the filling, peel the apples, cut into quarters and remove the seeds. Cut into about 1 cm (approximately 1/2 inch) wide strips and sprinkle with lemon juice. Grate the Marzipan. Roll out the dough on a floured surface to slightly larger than the baking sheet. Grease or line the baking sheet with parchment paper and line with the dough, forming an edge. Sprinkle the marzipan over the dough and add the apple slices evenly over the top.
For the streusel, combine all the ingredients and rub between your palms to crumble. Spread over the apples and bake in the preheated oven for about 45 minutes. Remove, let cool and serve cut into pieces.
