Preparation steps

Process the pastry flour, butter, powdered sugar, baking powder, egg and salt in a food processor to form a smooth dough. Shape dough into a ball, wrap in foil or plastic wrap and chill in refrigerator for at least 30 minutes. Meanwhile, peel the apples, core, quarter and cut into thin wedges, then sprinkle with lemon juice.

Preheat the oven to 180°C (approximately 350°F).

Roll out the dough thinly and then press into tart pan. Combine the coconut with mascarpone, sugar and egg yolks. Spread the mixture evenly on the bottom of the pastry dough and cover with the apple slices. Sprinkle with the brown sugar. For the streusel, chop the pine nuts and then combine with the sugar, butter and flour until crumbly. Spread the streusel on to of the apples. Bake until golden brown for about 30 minutes. Garnish with a dusting of powdered sugar. Serve immediately.
