Grease the wells of a muffin tin with butter and place the muffin tin in the freezer.
Mix the flour, apples, walnuts, baking powder and baking soda.
Whisk the egg, sugar, vegetable oil, buttermilk and juice.
Add the flour mixture to the egg mixture and mix loosely until all ingredients are moistened.
Pour the batter into the muffin tin. Sprinkle with sugar and bake for about 25 minutes at 180°C (approximately 350°F). Remove from the oven, let cool and serve.
