Preparation steps

1.

Separate the eggs. Whisk the flour and white wine until smooth. Whisk in the egg yolks, butter and vanilla.

2.

Whisk the egg whites with 1 pinch of salt until stiff. Whisk in the sugar then fold into the batter.

3.

Meanwhile, heat the frying oil in a deep fryer (or a large pot) to about 170°C (approximately 325°F).

Peel the apples, core and cut into 1 cm (approximately 1/3 inch) thick slices. Working in batches, dip the apple rings in the batter, drain and deep-fry until golden brown, around 2-3 minutes, turning once.

5.

Drain on paper towels. Dredge the fried apple rings in the combined sugar and cinnamon.

6.

Serve immediately with vanilla ice cream, if desired.
