Ingredients

For the apples
3 large Russet apples
3 tablespoons lemon juice
For the batter
150 grams Pastry flour
175 milliliters dry white wine
3 tablespoons vegetable oil
3 eggs
½ Vanilla bean (seeds removed)
1 teaspoon finely grated Lemon peel
1 pinch salt
2 tablespoons sugar
750 milliliters vegetable oil (for frying)
powdered sugar (and cinnamon)

Preparation steps

1.

Peel the apples, remove the core with a corer and cut the apple into thick slices. Toss the slices with the lemon juice. 

2.

Separate the eggs. Whisk the egg yolks with the flour, white wine, vegetable oil, vanilla bean seeds and lemon zest. Beat the egg whites with the salt and sugar until stiff. Fold the egg whites into the yolk mixture. 

3.

Heat the vegetable oil to 160°C (approximately 325°F).

Working in batches, dip the apple slices into the batter and fry in the hot oil until golden brown.  

5.

Drain on paper towels. 

6.

Dust with powdered sugar and cinnamon and serve immediately.
