1 tsp lemon juice
2 Tbsps Rum
200 grams Apricot jam
125 grams Pastry flour
1 egg
125 milliliters light beer
1 Tbsp butter (softened)

Preparation steps

Peel the apples and remove the core and seeds. Cut the apples into 1 cm (approximately 1/2 inch) thick rings and mix with lemon juice and 1 tablespoon rum.

Mix the apricot jam with the remaining rum. Stir the flour with the egg until smooth, then add the beer, softened butter and 1 pinch of salt and mix. Heat the oil in a wide pot or a frying pan with high sides. (It is hot enough when bubbles appear on the handle of a wooden spoon when it is inserted in the oil). Roll the apple rings in the sugar, dip into the batter and cook in the hot oil 1 minute, turn and fry for 1 more minute until crisp and golden. Drain on paper towels, sprinkle with sugar and serve with jam.
