Nutritional values

Refining a cake with ground nuts or kernels, as in this case with ground almonds, is always a good idea. This is because almonds are a good vegetable source of bone-strengthening calcium, blood-forming iron and muscle-building protein. The apples shine with a lot of fibre, especially when used with peel.

If you like, you can replace the spelt flour type 1050 with wholemeal spelt flour, either in whole or in part. This supports the nutty taste and brings in even more digestive fibres.

ground almonds
1 teaspoon
2 ½ ounces

Preparation steps

1.

For the pastry: combine flour, butter cut into pieces, egg, salt and sugar, quickly knead into smooth pastry. If necessary, add a little cold water or flour. Shape into a ball, wrap in plastic wrap and refrigerate for 30 minutes.

For the topping: rinse and pat dry apples, quarter and core, cut into slices. Mix with lemon juice.

Butter tart pan.

Roll out pastry on a floured surface and line tart pan with it, making an edge all around. Arrange apples on top of pastry in a fan pattern and drizzle with honey.

For the crumble: process flour with almonds, cinnamon, sugar and cold butter between your fingers until crumbly and sprinkle over apples. Bake in a preheated oven at 350°F for about 45 minutes or until golden brown.

Remove from the pan and cool. Cut into pieces and serve.
