Rinse the apples, peel, quarter, and remove the core. Cut apples into bite size pieces. Remove the lemon peel with a peeler and cut into 2 cm (approximately 3/4 of an inch) cubes.
Bring the water, lemon juice, lemon zest, sugar (to taste), cinnamon stick, cloves and raisins to boil in a pot. Add the apples and simmer over medium heat until the apple pieces are soft but not falling apart (cooking time may vary depending on the type of apple). Remove from the heat and let cool. Remove the cinnamon stick and cloves from the compote.
