How to Make Apple Compote

- 4 tart Apple (each about 7 ounces)
- 2 ozs Raw cane sugar
- 1 stalk cinnamon
- 3 allspice
- ¾ cup filtered Apple juice
Peel and core the apples. (A corer is helpful for this task, but you may also quarter the apples with a large knife and then cut out the core.)
Cut apples into quarters, then cut into large cubes.
Heat sugar in a pot over medium heat until light brown in color, stirring constantly.
Add cinnamon stick and allspice. Pour apple juice into pot, stirring vigorously, until sugar is dissolved.
Add apples to pot, cover and cook over low heat, stirring occasionally, until softened, about 12 minutes. Transfer apple compote to a bowl and let cool completely. Serve compote over pancakes, waffles, rice pudding, or cereal, as desired.

Healthy, because
"An apple a day keeps the doctor away", and rightly so, because apples are rich in secondary plant substances and their dietary fibers cleanse the intestines. They also have a positive effect on cholesterol metabolism: in the intestines, they bind the cholesterol-containing bile acids, which then have to be replenished. In return, cholesterol is removed from the blood, so that the level drops.
Even smarter
Prepare twice the amount of compote and freeze the rest. Acidic apples are particularly suitable for the apple compote. You can process the compote into apple pie or serve it with ice cream and other desserts. Depending on your preference, you can also use other fruits such as apricots or peaches in the compote.
