Preparation steps

Crumble yeast into a bowl. Melt 150 grams (approximately 2/3 cup) butter. Add 500 ml (approximately 2 cups) milk and heat to lukewarm. Stir together yeast, a portion of the milk liquid mix and 1 teaspoon flour. Cover and let rise in a warm place for 30 minutes.

Mix the remaining milk mixture, salt, remaining flour, egg and half the sugar and knead until the dough is elastic and forms a ball. Cover and leave for about 45 minutes in a warm place.

For the filling mixture, combine the remaining butter with the remaining sugar and cinnamon. Peel the apples, cut into quarters, core, and slice thinly.

Roll out the dough into a rectangle about 30 x 20 cm (approximately 12 x 8 inches) and spread with the filling mixture. Cover with the apple pieces and roll up the dough. Transfer to a parchment-lined baking sheet and brush with the remaining milk. Bake in an oven preheated to 200°C (fan oven 180°C; gas mark 3) (approximately 400°F) until golden brown, about 45 minutes.
