6 tablespoons Apple juice
cup butter
½ cup sugar (scant)
2 eggs
1 pinch salt
¾ cup wholemeal Durum wheat semolina
1 cup chopped Walnut
2 teaspoons Baking powder
½ teaspoon ground cinnamon
cup milk
For the topping
1 ¼ cups cream cheese
½ cup powdered sugar (heaped)
2 teaspoons lemon juice
To decorate
12 Apple chip
ground cinnamon

Preparation steps

1.

For the cupcakes: preheat the oven to 350°F. Place paper liners in a 12 hole muffin tin.

Mix together the apple pieces and apple juice.

Beat together the butter and sugar in a mixing bowl until creamy, then add the eggs, beating in one at a time, with the salt.

Mix together the semolina, walnuts, baking powder and cinnamon, and fold into the mixture together with the milk.

Fold in the apple pieces and juice and spoon the mixture into the paper liners. Bake for about 25 minutes until golden.

For the topping: beat the cream cheese until smooth. Sift in the icing sugar, a little at a time and mix well.

Add lemon juice to taste and spoon into a piping bag with a small round nozzle.

Pipe onto the cupcakes. Decorate each cake with an apple crisp and dust over a pinch of cinnamon.
