Apple Carrot Blueberry Smoothie

- 4 Apple (e.g. Golden Delicious)
- 1 lemon
- 5 ozs small carrots
- 4 ¼ ozs Blueberries (fresh or frozen)
- 5 ozs Apple juice
- 6 ozs Coconut milk
Wash apples, pat dry and cut off one cap; scoop out the inside with a melon baller, remove core and dice flesh. Cut lemon in half and squeeze juice. Spread lemon juice on apple lids and inside of apples and drizzle lemon juice over apple cubes.
Peel carrots and grate coarsely. Wash blueberries and put in a blender with apple cubes, carrot shavings, apple juice, and coconut milk and puree finely.
If desired, dilute smoothie with a little water and pour into the hollowed apples. To serve, pierce each apple lid with a colorful paper straw and place lids on apples.
