Preparation steps


For the batter, beat the butter with the sugar until frothy and stir in the eggs gradually. Mix the lemon zest with the flour and the baking powder and add into the butter-egg mixture alternately with the milk.

Peel 1 apple into quarters, remove the seeds, chop and stir into the batter. Pour the batter into a springform pan lined with baking paper and bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for 30-35 minutes.


Remove the springform pan from oven, remove the edge and place a cake ring around the cake.

For the topping, peel the remaining apples, cut into quarters, remove the core and dice. Boil the apple dices slowly with 75 ml (approximately ½ cup) of apple juice, cinnamon and vanilla sugar, and cook for 5 minutes. Mix 1 packet vanilla pudding powder with the remaining apple juice until smooth, stir into the cooking apples, and cook for 1 minute. Remove from heat and spread it over the cake.


Boil the milk and remove from heat. Mix the remaining packet of vanilla pudding powder with the advocaat, stir in the hot milk and boil for 1 minute.

Pour the milk mixture over the apples and let the cake cool at least for 2 hours. Serve decorated with chocolate shavings.
