Preparation steps

Chop apricots into fine pieces, combine with liqueur. Separate eggs. Beat egg whites until stiff. Whisk butter with sugar, orange zest and egg yolks until fluffy. Combine flour with baking powder and sift over egg yolk mixture, fold. Fold egg whites and drained diced apricots carefully. Add milk as necessary and spread batter in a greased springform pan, smooth.

Rinse and quarter apples, core and score on cut sides.

Arrange apples, cut side up, on the batter. Bake in preheated oven at 350°F for about 45-55 minutes. Remove from the oven and cool briefly, loosen from the pan and transfer to a cake plate.

Heat jam. Spread apples with jam and sprinkle with chopped pistachios. Serve.
