The sour cream as well as the apples make for a really juicy waht, which goes down well on any occasion. The quark also makes the dough nice and light, and in combination with the sour cream, it also provides high-quality protein as a bodybuilding material.
You can refine the cake with various chopped nuts or kernels - how about 1-2 handfuls of chopped pistachios, for example? The green kernels look great and score points with high-quality vegetable proteins and healthy fats.
- For the batter
- 200 grams Pastry flour
- 50 grams Spelt flour
- 150 grams softened butter
- 120 grams sugar
- 1 packet Vanilla sugar
- 4 eggs
- 1 teaspoon Baking powder
- 1 pinch salt
For the batter: whisk butter with salt and sugar until fluffy, add eggs. Combine flour with baking powder and fold into egg mixture.
For the topping: peel and halve apples, core and cut into wedges.
Grate 1 apple coarsely and fold into batter.
Pour batter into a greased pan.
Arrange remaining apples decoratively on top of cake and bake in preheated oven at 180°C (approximately 350°F) for about 50 minutes.
Remove from the oven and cool slightly. Loosen from the pan and cool on a wire rack completely. Dust with powdered sugar and serve.
