This delicious sheet cake classic stays nice and juicy by adding applesauce - this partly replaces butter and above all sugar, because the puree brings its natural sweetness. The almond slivers provide some crunch on top and are little helpers in terms of bone strengthening due to their calcium content.

If you want to support your digestion and therefore bring more fibre into the apple pie, you can replace some or all of the spelt flour with the wholemeal variety. Watch out: The wholemeal flour also increases the liquid requirement in the dough.

For the pastry
125 grams butter
150 grams sugar
1 pinch salt
3 eggs
1 organic lemon (zested)
200 grams Pastry flour
2 teaspoons Baking powder
In addition
butter (for greasing)
For the topping
1 kilogram Apple
100 grams butter
125 grams sugar
½ teaspoon Ground cinnamon
4 tablespoons Almond slivers
3 tablespoons powdered sugar

Preparation steps


For the pastry: whisk butter with sugar and salt until fluffy.  Gradually add eggs and whisk well. Combine lemon zest with baking powder and flour. Add flour mixture and milk, alternating, to butter mixture. Butter baking pan and spread batter in the pan, smooth. For the topping: peel apples, quarter and core. Spread apples on top of batter. 


Cover butter flakes and sprinkle with sugar and cinnamon. Bake in preheated oven at 200°C (approximately 400°F) for about 40 minutes. About 10 minutes before the end of baking, sprinkle with almonds and sugar. Remove from the oven and cool. Serve.
