Apple and Orange Marmalade Filled Pancakes

- For the pancake mixture
- 2 eggs
- 1 cup milk (3.5% fat)
- 1 cup flour (heaped)
- 1 tablespoon sugar
- butter (for frying)
Mix the eggs, milk, flour and sugar to a smooth batter and leave to stand for 20 minutes.
Put the orange juice into a pan with the sugar and bring to the boil. Simmer until reduced slightly, then stir in the butter and Grand Marnier. Add the sliced apples to the pan with the marmalade and reheat briefly.
To make the pancakes, heat a little butter in a frying pan and fry 8 thin pancakes one after the other.
Fill the pancakes with the fruit filling, put on plates and serve.
