Ingredients

For the pastry
2 ¼ cups
All purpose flour (plus extra for dusting)

For the filling

large, baking Apple (peeled, cored and quartered)
2 tablespoons

plain flour
1 teaspoon
ground cinnamon
1 pinch
cup
butter (diced)
To finish

Preparation steps

1.
For the pastry: put the flour, sugar and salt in a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs. Add the water and knead into a firm, smooth dough. Wrap in cling film and chill for 30 minutes.

Heat the oven to 190°C (170° fan) 375°F gas 5. Grease a 23cm|9" pie dish or plate.

For the filling: mix the apples with the lemon juice.

Mix together the sugar, flour, cinnamon and salt and mix into the apples.
5.
Roll out 1/2 the dough on a floured surface, slightly larger than the pie dish and line the dish.
6.
Add the apples and spread evenly. Sprinkle with the butter.
7.
Roll out the remaining dish to cover the dish and press on top of the apples. Press the edges with a flat knife.
8.
Brush the pie with milk and sprinkle with sugar. Cut a small hole in the centre of the pie.
9.
Bake for 35-45 minutes until golden brown.
