200 grams Pastry flour
400 milliliters milk
150 grams Bacon
4 sour Apple
2 tablespoons lemon juice
4 eggs
1 tablespoon honey
1 pinch salt

Preparation steps

1.

Peel, quarter, core and slice the apples. Drizzle with lemon juice.

In a bowl, blend the flour with the milk until smooth. Stir in the eggs, honey and salt, and allow to rest for 10 minutes.

Cook 1/4 of the bacon in a skillet until crispy.

Place the bacon slices next to each other in the pan, once cooked. Pour 1/4 of the batter over the bacon up to 0.5 cm (approximately 1/4 inch) deep. Spread a 1/4 of the apple slices over top and cover the pan with a lid. Reduce the heat to low and cook until the bottom of the omelet is golden brown. Flip the omelet and cook the other side until golden.

Place the finished omelet onto a plate. Repeat the same method for 3 additional omelets. Sprinkle the omelets with icing sugar and serve hot.
